What You’ll Need:
For the Filling:
-
2½–3 cups fresh blackberries
-
⅓ cup brown sugar
-
2 tbsp melted butter
-
½ tsp vanilla extract
-
2 tsp fresh lemon juice
-
2 tbsp arrowroot starch
-
Pinch of cinnamon
-
Pinch of sea salt
-
1 box store-bought pie dough or puff pastry (to keep things easy)
For Finishing:
-
1 egg white + 1 tsp water (beaten, for egg wash)
-
Coarse sugar (for topping)
Directions:
-
Prep the dough:
Remove the puff pastry from the refrigerator and let your pie dough or puff pastry sit at room temperature until it softens slightly and is easy to work with. -
Make the filling:
In a bowl, stir together the melted butter, brown sugar, vanilla, lemon juice, arrowroot starch, cinnamon, and salt. Add the blackberries and gently toss to coat. -
Preheat the oven:
Set it to 400°F. -
Roll the dough:
On a floured piece of parchment paper, roll the dough into a rough circle or square, about ⅛ inch thick. Transfer the parchment to a baking sheet. -
Add the filling:
Spoon the blackberry mixture into the center of the dough, leaving a 2-inch border around the edges. -
Fold the edges:
Fold the dough over the filling, pleating as you go. It doesn’t need to be perfect—this dessert is meant to look rustic. -
Brush and sprinkle:
Brush the crust with the egg wash and sprinkle with coarse sugar. -
Bake:
Bake at 400°F for about 30 minutes, until the crust is golden and the filling is bubbling. Some juices may leak out—that’s okay. -
Cool and serve:
Let it cool for 15–20 minutes before slicing. Serve on its own or with a scoop of vanilla ice cream.
