  • 1 cup dry jasmine or basmati rice

  • 1 ripe mango, diced

  • 1 avocado, sliced

  • ½ English cucumber, thinly sliced

  • 4–5 radishes, thinly sliced

  • 2 green onions, thinly sliced

  • Fresh cilantro, for serving

  • Fresh lime wedges, for serving

For the Blackened Chicken Seasoning

  • 2 tablespoons olive oil

  • 2 teaspoons dried oregano

  • 2 teaspoons paprika

  • 1 teaspoon garlic powder

  • 1 teaspoon onion powder

  • ½ teaspoon kosher salt

  • ½ teaspoon freshly cracked black pepper

For the Cilantro Lime Rice

  • ½ teaspoon kosher salt

  • 2 teaspoons extra-virgin olive oil

  • ⅓ cup finely chopped fresh cilantro

  • Zest and juice of 1 lime

  • Water, according to rice package directions

For the Creamy Green Sauce (Optional)

Want to add a little something extra?

Try The Green Sauce, a creamy blend of cilantro, lime, Greek yogurt, and jalapeño.

It's delicious drizzled over these bowls, but completely optional. There's already so much flavor going on that you really don't need it.

You'll need:

  • 1 cup fresh cilantro leaves and tender stems

  • ½ cup plain full-fat Greek yogurt

  • 2 tablespoons fresh lime juice

  • 2 tablespoons extra-virgin olive oil

  • ½ jalapeño, seeds and ribs removed

  • 1 garlic clove

  • ¼ teaspoon kosher salt, plus more to taste

How to Make Blackened Chicken & Cilantro Lime Rice Bowls

Step 1: Make the Creamy Green Sauce (If Using)

If you're making the sauce, start here so it has time to chill in the refrigerator while you prepare everything else.

Add the cilantro, Greek yogurt, lime juice, olive oil, jalapeño, garlic, and kosher salt to a blender or small food processor.

Blend until smooth and creamy.

Give it a taste and adjust the salt or lime juice as needed.

If you prefer a thinner consistency, add a teaspoon or two of water and blend again.

Cover and refrigerate until you're ready to serve.

Pro tip: This sauce is also delicious on tacos, grilled chicken, roasted vegetables, and pretty much anything else you can think of. You may want to make extra!

Step 2: Make the Cilantro Lime Rice

Rinse the jasmine or basmati rice under cold water until the water runs mostly clear.

Cook according to the package directions, adding ½ teaspoon kosher salt to the cooking water.

Once the rice is finished cooking, fluff it gently with a fork.

Stir in the extra-virgin olive oil, chopped fresh cilantro, and lime zest.

Add the lime juice gradually, tasting as you go.

I like the lime flavor to come through without overpowering the rice.

Set aside and keep warm while you prepare the chicken.

Step 3: Season the Chicken

Pat the chicken breasts dry with paper towels and slice them into thin cutlets.

In a small bowl, combine the dried oregano, paprika, garlic powder, onion powder, kosher salt, and freshly cracked black pepper.

Rub the chicken with the olive oil, then coat both sides evenly with the seasoning mixture.

The paprika and spices give the chicken that beautiful, deeply browned crust without making it overly spicy.

I kept this version mild because my kids love it that way.

Step 4: Cook the Blackened Chicken

Heat a large cast-iron skillet or heavy-bottomed pan over medium-high heat.

Once the pan is hot, add the seasoned chicken in a single layer.

Work in batches if necessary so the chicken has enough room to brown.

Cook for approximately 3–5 minutes per side, depending on thickness, until the outside develops a beautiful dark golden crust.

The chicken should reach an internal temperature of 165°F.

If the spices begin to burn, reduce the heat slightly.

Transfer the chicken to a cutting board and allow it to rest for approximately 5 minutes before slicing across the grain.

This helps keep the chicken tender and juicy.

Step 5: Prepare the Fresh Toppings

While the chicken rests, prepare your toppings.

Dice the ripe mango, slice the avocado, cucumber, and radishes, and chop the green onions.

I like to arrange everything in separate bowls so everyone can build their own dinner.

It's an easy way to get the kids involved, and everyone gets exactly what they want.

Step 6: Build Your Bowls

Start with a generous scoop of warm cilantro lime rice.

Add the sliced blackened chicken, sweet mango, creamy avocado, cucumber, and radishes.

Sprinkle with green onions and fresh cilantro.

Finish with a good squeeze of fresh lime.

If you're using The Green Sauce, drizzle a little over the top or serve it on the side.

And that's it!

Dinner is served.

Enjoy!

What Makes These Chicken Rice Bowls So Good?

It's all about the combination of flavors and textures.

The blackened chicken is savory and beautifully seasoned.

The cilantro lime rice is fluffy, bright, and slightly tangy.

The mango adds natural sweetness, while the avocado brings a creamy richness.

Cucumber and radishes add crunch, and the fresh lime ties everything together.

Every bite has a little bit of everything.

And because each ingredient is served separately before assembling, it's incredibly easy to customize.

Tips for the Best Blackened Chicken & Cilantro Lime Rice Bowls

Let Everyone Build Their Own

This is what makes these bowls so great for family dinners.

Put everything on the table and let everyone choose their favorite toppings.

More mango? Absolutely.

Extra avocado? Always.

No radishes? No problem.

Everyone gets a dinner they actually want to eat.

Keep the Chicken Mild

This blackened chicken seasoning has plenty of flavor without being spicy.

Paprika, oregano, garlic powder, and onion powder create a savory crust that's perfect for kids or anyone who doesn't love heat.

For a spicier version, add a pinch of cayenne pepper or crushed red pepper flakes.

Use Ripe Mango

The sweetness of ripe mango is incredible with the savory chicken and tangy cilantro lime rice.

It's one of my favorite parts of this bowl.

Look for a mango that gives slightly when gently pressed.

Don't Overcook the Chicken

Thin chicken cutlets cook quickly.

Use a meat thermometer and remove them from the heat once they reach 165°F.

Letting the chicken rest before slicing also helps preserve its juices.

Make It Ahead

You can prepare the chicken, rice, and Green Sauce ahead of time and refrigerate them separately.

When you're ready to eat, reheat the chicken and rice, slice the fresh toppings, and assemble.

It's an easy way to make busy weeknight dinners feel manageable.

Don't Forget the Lime

That final squeeze of fresh lime juice brings everything together.

It brightens the chicken, rice, mango, and vegetables and makes such a difference.

How to Make These Rice Bowls Kid-Friendly

If you've ever tried to make dinner for a family with different preferences, you already know the challenge.

One person doesn't like tomatoes.

Another refuses anything green.

Someone wants extra sauce.

And somehow, everyone is hungry at the exact same time.

That's why build-your-own rice bowls are such a good idea.

Instead of making multiple dinners, prepare one delicious meal and let everyone customize it.

For younger kids, you can:

  • Serve the chicken, rice, and toppings separately.

  • Cut the chicken into smaller, easy-to-eat pieces.

  • Leave out the radishes or other vegetables they don't enjoy.

  • Add extra mango for natural sweetness.

  • Serve the Green Sauce on the side for dipping.

  • Keep the chicken seasoning mild.

It's a simple way to make family dinners more relaxed and enjoyable.

Are Blackened Chicken Rice Bowls Healthy?

These bowls offer a satisfying combination of nutrients from a variety of whole-food ingredients.

Chicken provides protein to help support muscle maintenance and keep you satisfied.

Rice provides carbohydrates for energy.

Avocado and olive oil contribute unsaturated fats.

Mango, cucumber, radishes, and cilantro add fiber, vitamins, minerals, and fresh flavor.

And because everyone can customize their bowl, it's easy to adjust portions and ingredients to suit different preferences.

It's a balanced, colorful meal that tastes just as good as it looks.

Easy Variations to Try

One of the best things about these blackened chicken bowls is how versatile they are.

Swap the Protein

Try:

  • Grilled shrimp

  • Salmon

  • Steak

  • Ground turkey

  • Crispy tofu

  • Black beans

Change the Base

Instead of cilantro lime rice, use:

  • Brown rice

  • Quinoa

  • Cauliflower rice

  • Mixed greens

  • Farro

Add More Toppings

Try adding:

  • Roasted corn

  • Black beans

  • Cherry tomatoes

  • Shredded cabbage

  • Pickled red onions

  • Jalapeños

  • Crumbled cotija cheese

  • Toasted pumpkin seeds

Use whatever you have in the refrigerator.

That's part of what makes these bowls so easy.

How to Meal Prep Blackened Chicken Rice Bowls

These bowls are perfect for meal prep because most of the components can be prepared ahead of time.

Cook the chicken and cilantro lime rice, then divide them into airtight containers.

Store the mango, cucumber, radishes, and avocado separately.

For the best texture, slice the avocado shortly before serving.

Keep the Green Sauce refrigerated in its own container.

When you're ready to eat, reheat the chicken and rice until thoroughly hot, add the fresh toppings, and finish with lime.

Storage tip: Refrigerate cooked chicken and rice promptly in separate shallow containers. Use within 3–4 days, and reheat leftovers to 165°F. Cool rice quickly after cooking rather than leaving it at room temperature.

What to Serve with Blackened Chicken Rice Bowls

These bowls are satisfying enough to serve as a complete meal.

But if you're feeding a crowd or planning a family gathering, a few simple sides work beautifully.

Try:

  • Fresh fruit salad

  • Grilled corn

  • Tortilla chips and guacamole

  • Black bean salad

  • Roasted sweet potatoes

  • A simple green salad

  • Fresh salsa
