Ingredients

Chili

  • 2 tbsp olive oil

  • 1 yellow onion, finely diced

  • 1 bell pepper, finely diced

  • 2 lbs ground meat

  • 4 cloves garlic, minced

  • 2 tsp salt (plus more to taste)

  • 1 tbsp cumin

  • 1 tbsp chili powder

  • 1 tbsp smoked paprika

  • 1 tbsp oregano

  • ½ tsp cayenne pepper (optional)

  • 4 tbsp tomato paste

  • 1 (28 oz) can diced tomatoes in juice

  • 1 (4 oz) can diced green chiles

  • 4 cups beef bone broth (low sodium preferred)

  • 1–2 cans kidney beans, drained and rinsed

Garnish Options

Shredded cheese, fresh cilantro, sliced scallions, jalapeño, and a squeeze of lime


How to Make Game Day Chili

  1. Sauté the base
    Heat olive oil in a large pot over medium heat. Add onion and bell pepper and cook until softened, 5–6 minutes.

  2. Add garlic
    Stir in garlic and cook 1 minute until fragrant.

  3. Brown the meat
    Add ground meat, breaking it up with a spoon as it cooks, until browned and cooked through.

  4. Bloom the spices
    Stir in tomato paste, salt, cumin, chili powder, smoked paprika, oregano and cayenne. Cook 1–2 minutes to bloom the spices and deepen flavor.

  5. Simmer
    Add diced tomatoes, green chiles, and 2-4 cups of the bone broth. Bring to a gentle simmer.

  6. Low and slow
    Reduce heat to low and simmer uncovered for 1½ - 2 hours, stirring occasionally. Add remaining broth as needed for desired thickness.

  7. Add beans
    Stir in kidney beans and simmer 10 minutes more, until heated through.

  8. Finish and serve
    Taste, adjust seasoning, and top with your favorite garnishes, shredded cheese, fresh cilantro, sliced scallions, jalapeño, and a squeeze of lime, if desired.
