For the Lemon Blondies:

1 cup granulated sugar

2 tbsp lemon zest (about 1 large lemon)

1 cup all-purpose flour

For the Lemon Glaze:

How to Make the Magic Happen:
Step 1: Preheat your oven to 350°F. Line an 8×8-inch pan with parchment paper so the blondies can lift out like a dream.
Step 2: In a large bowl, rub lemon zest into sugar with your fingertips. Why? Because it smells amazing and infuses the sugar with citrusy joy.
Step 3: Add melted butter and whisk it all together. Then throw in the eggs, vanilla extract, lemon extract, and lemon juice. Whisk it good—until it’s glossy and pale and looks like sunshine in a bowl.
Step 4: Fold in flour, salt, and baking powder. Be gentle—no overmixing, we want chewy not tough.
Step 5: Pour that luscious lemony batter into the pan and smooth it to the corners. Bake for 15–20 minutes or until a toothpick comes out mostly clean. Don’t overbake—these should be moist!
Now for the Lemon Glaze:
Step 6: While those blondies cool, whip up the glaze. In a small bowl, whisk together the powdered sugar, lemon juice, and vanilla extract until it’s smooth and pourable. Like lemon icing, but better.
