Linguine with Shrimp, Garlic, Shallots, Cherry Tomatoes + White Wine

This is the pasta you make when you want to feel fancy but also a little like you just casually threw something together in your Italian seaside villa kitchen. It’s zesty, garlicky, herby, buttery, saucy, and absolutely loaded with shrimp and juicy cherry tomatoes. Yes, we just described perfection.
What You’ll Need:

1 lb shrimp, peeled & deveined

4 cups cherry tomatoes, halved

2 shallots, diced

6 cloves garlic, minced (go big or go home)

½ – ¾ tsp red pepper flakes (your spice level, your rules)

Zest of ½ a lemon

½ cup white wine (and maybe a glass for the chef 🍷)

8 Tbsp olive oil, divided

2 Tbsp butter, divided

1 tsp salt

½ tsp black pepper

Fresh chopped basil

Fresh chopped parsley

1 lb linguine

¼ cup reserved pasta water (the liquid gold)
Let’s Get Cooking:
1. Shrimp Time
Grab a large skillet and heat 2 Tbsp of olive oil + 1 Tbsp butter over medium heat.
Season your shrimp with a little salt and pepper, then cook ‘em about 1 minute per side, until pink and opaque (aka: just right).
Add your lemon zest, toss like a pro, and then gently remove them from the pan. Keep ‘em cozy somewhere warm.
2. Pasta Time
Boil that linguine in salty water like you mean it.
Reserve 1/2 cup of the pasta water before draining—yes, we’re serious.
Drain and set aside.
3. Sauce Situation
In a large saucepan, heat another 2 Tbsp of olive oil + 1 Tbsp butter.
Sauté your shallots, garlic, and red pepper flakes until your kitchen smells like you live in a Food Network episode.
Add fresh basil and parsley, then in go the cherry tomatoes, salt, and pepper.
Stir it all together and let the tomatoes get nice and soft.
Now the good part: pour in that white wine, let it bubble and reduce slightly (just a lil’ wine magic).
Cover and simmer the whole thing for 20 minutes. Grab a snack. Call your mom. Marvel at your culinary brilliance.
4. Finish Line
Add the shrimp back into the sauce like they never left.
Toss the cooked linguine in, splash in some reserved pasta water if it needs loosening, and give everything a final swirl of love.
Top with more fresh parsley, maybe some grated Parm if you’re feeling bold, and serve warm.
