Oh My Gourd-ness Pumpkin Bar Recipe

There's no shame in the pumpkin lover game! We are huge fans of all things pumpkin especially with fall in the air. These homemade pumpkin bars are an easy recipe you can bake at home. Mya made these in her own kitchen using simple ingredients like flour, real pumpkin, pure cane sugar...the same real ingredients you find in all of our Feed Your Soul baked goods. Enjoy this recipe with friends, family, or all by yourself in the comfort of your own fall flannels. Happy fall, friends!! 

 

 

Dry Ingredients

2 cups all-purpose flour

2 teaspoons baking powder

2 teaspoons cinnamon

1 teaspoon salt

1 teaspoon baking soda

¼ teaspoon nutmeg

 

Wet Ingredients

1 cup canola oil

1 2/3 cups granulated sugar (cane sugar)

4 eggs

15 oz canned pure pumpkin

 

Directions

Preheat the oven to 350 degrees F.

Combine flour, baking powder, baking soda, cinnamon, nutmeg, and salt. Set aside.

Using an electric mixer at medium speed, combine the eggs, sugar, oil and pumpkin until light and fluffy.

Add the dry ingredients to the pumpkin mixture and mix at low speed until thoroughly combined and the batter is smooth.

Spread the batter into an ungreased 9x13-inch baking pan. (Or line the pan with parchment paper) Bake at 350 degrees for 30-35 minutes. Allow to cool.

Cut into bars. *Baking times and temperatures can vary. The bars are done when a toothpick inserted in the center comes out clean.
