Olive Oil Carrot Cake: Moist, Sweet, and Surprisingly Simple

Let’s talk about carrot cake—but not just any carrot cake. This one is tender, flavorful, and made with olive oil, maple syrup, and a cozy blend of warm spices. It’s naturally sweetened (mostly), made with wholesome ingredients like almond and oat flour, and finished with a creamy frosting that’s just the right amount of indulgent.

Whether you’re baking for a birthday, brunch, or just because it’s Tuesday, this cake is always a good idea.


What You’ll Need:

Wet Ingredients:

  • ½ cup olive oil

  • ½ cup maple syrup

  • ½ cup Greek yogurt

  • ½ cup light brown sugar (feel free to use coconut sugar)

  • 2 eggs

  • 1 tsp vanilla extract

  • 1½ cups shredded carrots (about 2 large)

Dry Ingredients:

  • 1½ cups almond flour

  • 1 cup oat flour

  • 1 tsp baking soda

  • 1 tsp baking powder

  • ½ tsp salt

  • ½ tsp cinnamon

  • ¼ tsp nutmeg

  • ½ cup chopped walnuts or pecans (optional)

Frosting:

  • 8 oz butter

  • 8 oz cream cheese

  • 1 tsp vanilla

  • 1¾ cups sifted confectioners sugar

Optional Topping: Shredded coconut


How to Make It:

  1. Preheat your oven to 350°F. Grease a 9-inch round cake pan.

  2. In a large bowl, whisk together the olive oil, maple syrup, yogurt, brown sugar, eggs, and vanilla until smooth. Fold in the shredded carrots.

  3. Add in the dry ingredients: almond flour, oat flour, baking soda, baking powder, salt, cinnamon, and nutmeg. Mix gently until everything is combined and the batter looks smooth and cozy.

  4. Stir in the walnuts (totally optional but highly recommended for crunch). Pour the batter into the prepared pan and smooth the top.

  5. Bake for 45–50 minutes, or until a toothpick inserted into the center comes out clean. Let the cake cool completely before frosting.


Frosting Time:

In a large bowl, beat the butter, cream cheese, and vanilla together until light and fluffy. Gradually add in the sifted confectioners sugar and beat until smooth and creamy.


Finish & Enjoy:

Frost your fully cooled cake generously. Sprinkle with shredded coconut if you’re feeling festive.
