Shrimp Salad with Green Goddess Dressing: Shrimp, Spice & Everything Nice
A salad so good, it should come with a warning label: May cause spontaneous happiness.
Let’s just be honest—this is not your average Tuesday salad. This is a salad that crunches, zings, and makes you feel like you really have it together, even if your socks don’t match and you forgot to thaw dinner yesterday.
Packed with juicy shrimp, crisp veggies, creamy avocado, and a vibrant Green Goddess dressing that you’ll want to pour on everything (including toast, eggs, maybe your soul), this is fresh, flavorful, and totally doable.
You’ll Need:
For the Shrimp:
-
1 lb raw shrimp, peeled and deveined
-
2 tbsp olive oil
-
1 tsp kosher salt
-
1 tsp garlic powder
-
½ to ¾ tsp red pepper flakes (you’re the boss of your spice level)
-
1 tsp fresh lemon zest
For the Salad:
-
5 cups butter lettuce
-
2 cups baby arugula
-
1 cup shredded red cabbage
-
3–4 baby cucumbers (or 1 big one), thinly sliced
-
1 ripe avocado, sliced or diced
For the Green Goddess Dressing:
-
2 scallions
-
1 cup fresh parsley
-
½ cup mixed herbs (basil, cilantro, dill, tarragon—go wild!)
-
1 cup Greek yogurt
-
2 tbsp olive oil
-
2 tbsp lemon juice
-
1 tsp white wine vinegar
-
1 medium clove garlic
-
½ tsp kosher salt (plus more to taste)
-
Fresh cracked black pepper, to taste
Let’s Make Magic:
1. Make the Green Goddess Dressing
Throw all the dressing ingredients into a blender or food processor and blend until creamy and dreamy. Taste it. Dance a little. Add more salt or lemon if needed. Set it aside—or hide it in the fridge if you're afraid someone will eat it before dinner.
2. Cook the Shrimp
Pat those shrimp dry like they just got out of the shower. In a bowl, toss with olive oil, kosher salt, garlic powder, red pepper flakes, and lemon zest until evenly coated.
Heat a large skillet over medium-high heat. Add the shrimp in a single layer and cook for 2–3 minutes per side. They should be pink, opaque, slightly golden, and smell like you're officially a pro chef. Set them aside and try not to eat them all before assembling the salad.
3. Build the Salad
In a large bowl, mix the butter lettuce, arugula, cabbage, cucumbers, and avocado. It should already look like a rainbow. Top with the shrimp like you're crowning royalty.
4. Dress It Up
Drizzle that Green Goddess magic over the top, toss gently, and serve it up while it’s fresh and fabulous.
Final Thoughts:
This salad is everything: spicy, creamy, crunchy, and light. It’s the kind of meal that checks all the boxes—delicious, easy, wholesome, and somehow just feels fancy.
Whether it’s lunch with friends, a solo power meal, or your go-to when “real dinner” just isn’t happening—this shrimp salad wins.
