Snack Smarter: Homemade Granola That Beats Store-Bought Every Time

This is the granola you didn’t know you needed… it’s that good. I’ve been making it on repeat and can’t stop eating it! The best part? You can customize it however you like—swap in your favorite nuts, seeds, or dried fruit and make it your own.

It’s light, crunchy, and absolutely delicious. Bonus: it’s gluten-free, dairy-free, and refined sugar-free! Enjoy it with cold milk, over Greek yogurt with a drizzle of honey, or (let’s be real) straight outta the jar.


Ingredients

  • 2 cups old-fashioned oats

  • ½ cup unsweetened shredded coconut

  • ¼ cup sliced or chopped almonds

  • ¼ cup chopped cashews

  • 1 tsp cinnamon

  • ¼ tsp kosher salt

  • 3 Tbsp coconut oil, melted

  • ¼ cup pure maple syrup

  • 2 Tbsp coconut sugar

  • ¼ cup chopped dried apricots (add after baking)

  • ¼ cup chopped dried cranberries (add after baking)


Instructions

  1. Preheat oven to 325°F (160°C). Line a baking sheet with parchment paper.

  2. In a large bowl, combine oats, coconut, almonds, cashews, cinnamon, and salt.

  3. Add melted coconut oil, maple syrup, and coconut sugar. Stir until evenly coated.

  4. Spread mixture onto the prepared baking sheet in an even layer. Press lightly with a spatula to form some clumps.

  5. Bake and check at:

    • 15 minutes: granola should be turning golden. Gently stir, keeping some clumps intact.

    • 20 minutes: nuts and coconut should be toasted, granola evenly golden. It may feel slightly soft but will crisp as it cools.

  6. Remove from oven. Let cool completely on the pan without stirring so clusters set.

  7. Once cooled, break into pieces and mix in apricots and cranberries.


Note

  • Feel free to swap out any nuts, seeds or dried fruit for your favorites.

Serving Ideas

  • By the handful as a snack (dangerously good).

  • With cold milk for a quick breakfast.

  • Sprinkled over yogurt with a drizzle of honey.

Storage

Store in an airtight container at room temperature for up to 2 weeks.
