Summer Antipasto Salad: Like a Picnic in a Bowl

Welcome to the salad of your Italian summer dreams. Think sunshine, a Vespa, and a plate loaded with salami, cheese, and all the good stuff—but without the actual need to pack a suitcase or find your passport. This Summer Antipasto Salad is here to impress with zero effort and maximum flavor.

It’s crunchy. It’s zesty. It’s meaty. It’s cheesy. It’s herby. It’s basically a group project where everyone actually showed up and did their part.

And just like everything we make, it’s crafted with care. We take pride in our process, our facility, our team, and our mission to give back. We bake integrity into everything we do—even the no-bake stuff.

Here’s What You’ll Need:

  • 1 head of romaine lettuce, chopped (about 4 cups)

  • 1 cup cherry tomatoes, halved

  • 6 oz Genoa or hard salami (bring the spice)

  • 6 oz Prosciutto or more salami (double the love)

  • 6 oz mozzarella pearls (aka little creamy cheese bombs)

  • 6 oz Parmesan or any hard cheese (shaved is fancy, grated is fine—we don’t judge)

  • ½ cup roasted peppers (hello, smoky sweetness)

  • ¼ cup red onion (for the drama)

  • ¼ cup pepperoncini, seeds removed and chopped (optional heat, highly recommended)

  • ½ cup Castelvetrano olives (the Beyoncé of olives)

  • Fresh basil + parsley (for garnish and good vibes)

Let’s Make Salad Magic

  1. Make your dressing.
In a small bowl, whisk together:

    • Good olive oil

    • Juice of 1 lemon

    • A splash of vinegar (white wine or red—dealer’s choice)

    • 1 clove garlic, minced

    • A pinch of oregano

    • Salt and pepper to taste

  2. In a large bowl, combine all the good stuff:

    • Lettuce

    • Tomatoes

    • Salami

    • Mozzarella

    • Roasted peppers

    • Red onion

    • Pepperoncini

    • Olives
Toss it like you mean it.

  3. Drizzle with that homemade dressing. Gently toss to coat everything in zesty joy.

  4. Top it off with fresh basil and parsley. Feel free to sprinkle on extra Parmesan if you’re feeling extra (we always are).

  5. Serve it up! Pair with crusty bread, a chilled glass of something delicious, and a sunset if you’ve got one handy.

Whether you're hosting a BBQ, brunching on a patio, or just want a salad that doesn't feel like punishment, this Summer Antipasto Salad brings the flavor and the fun.

As always, we stand by our mission—great food, great people, and giving back in every way we can. This one’s for the snackers, the grazers, and the salami stans. Mangia!
