Chorizo & Herb Stuffing: A Bold Twist on a Thanksgiving Classic

Every holiday table has that one dish people remember long after the plates are cleared—and this year, it’s going to be this Chorizo and Herb Stuffing. Savory, aromatic, and full of comforting texture, it’s everything you love about traditional stuffing, elevated with smoky chorizo and fresh, vibrant herbs.

Just like every recipe we share, this dish is rooted in the values we live by: quality ingredients, thoughtful craftsmanship, and a commitment to giving back. From our facility to our team, from the products we create to the mission that drives us—we bake integrity into everything we do. And that means every bite should feel like comfort, care, and celebration.

Why Chorizo?

The chorizo adds a subtle heat and deep richness that pairs beautifully with the classic herb combo—parsley, oregano, sage, thyme—bringing a modern twist to the dish without overpowering the nostalgic flavor profile everyone expects at Thanksgiving. It’s familiar, but unforgettable.

What You’ll Need

  • 1 loaf French bread, cut into 1-inch cubes (about 8 cups)

  • 1 cup diced or crumbled chorizo

  • 10 tablespoons unsalted butter

  • ¼ cup shallots, finely sliced

  • ½ cup onion, finely chopped

  • 1 cup leeks, finely chopped

  • 1 ½ cups celery, finely chopped

  • 3 garlic cloves, minced

  • ¼ cup chopped fresh Italian parsley

  • 2 tablespoons chopped fresh oregano

  • 2 tablespoons chopped fresh sage

  • 2 tablespoons chopped fresh thyme

  • 1 teaspoon coarse kosher salt

  • ½ teaspoon freshly ground black pepper

  • 3 large eggs

  • 2½–3 cups low-sodium chicken broth (more for softer stuffing)

How to Make It

1. Toast the Bread

Preheat the oven to 300°F.
Spread bread cubes on a baking sheet and toast for 15–20 minutes until dried but not deeply browned. Let cool completely—this helps them soak up the flavors later.

2. Brown the Chorizo

Cook the chorizo in a skillet over medium heat until crisp around the edges.
Remove and set aside. (You can keep the flavorful chorizo oil in the pan for a deeper-colored stuffing, or use a clean skillet for a lighter look.)

3. Sauté the Vegetables

In a fresh skillet, melt the butter over medium heat.
Add shallots, onion, leeks, and celery. Sauté 5–6 minutes until softened.
Add garlic, fresh herbs, salt, and pepper; cook another 1–2 minutes until fragrant.

4. Combine Everything

Toss the toasted bread cubes and cooked chorizo with the buttery herb mixture until evenly coated.
Let it cool slightly to avoid scrambling the eggs.

5. Add Eggs & Broth

Whisk eggs and broth together, then pour over the bread mixture.
Gently fold until bread is moistened but not soggy. Add extra broth if needed.

6. Bake to Golden Perfection

Transfer to a greased casserole dish.
Cover with foil and bake at 350°F for 25–30 minutes.
Uncover and bake another 8–10 minutes to crisp the top.

Let it rest a few minutes before serving—the flavors settle beautifully.

Make-Ahead Tips

This stuffing is a dream for planners:

  • Mix everything the day before and refrigerate.

  • Before baking, add a splash of broth if it looks dry.

  • Cover and bake at 350°F for 25–30 minutes, then uncover for a golden finish.

  • Add a few dots of butter or sprinkle fresh parsley to make it extra special.
