What You’ll Need:
Dry Ingredients:

Wet Ingredients:

½ cup pumpkin purée

1¼ cups milk

➤ Non-dairy: oat, almond, soy, etc. -
2 tbsp melted butter
➤ Dairy: butter
➤ Vegan: vegan butter or coconut oil -
1 large egg
➤ Vegan substitute: 1 flax egg (1 tbsp ground flax + 3 tbsp water) -
1 tsp vanilla extract
Cinnamon Swirl:

4 tbsp butter (dairy or vegan)

¼ cup sugar

2 tsp cinnamon

1 tbsp pancake batter
Instructions:
1. Mix the dry ingredients:
In a large bowl, whisk together flour, baking powder, salt, cinnamon, pumpkin pie spice, and sugar.
2. Mix the wet ingredients:
In a separate bowl, whisk together pumpkin purée, milk, melted butter, egg (or flax egg), and vanilla.
3. Combine:
Pour the wet mixture into the dry and stir just until combined. Don’t overmix—lumps are okay!
4. Make the cinnamon swirl:
In a small bowl, stir together melted butter, sugar, cinnamon, and 1 tbsp of the pancake batter. Spoon into a squeeze bottle or small plastic bag (snip a tiny corner if using).
5. Cook the pancakes:
Heat a skillet or griddle on medium heat and lightly grease. Pour batter into rounds, then swirl the cinnamon mixture onto each pancake.
6. Flip and finish:
When bubbles form and edges look set, flip and cook for 1 more minute or until golden.
