Easy Healthy Greek Salad: Fresh, Zesty, and Ready in 15

The best part? It’s ready in just 15 minutes. Perfect for busy nights, easy lunches, or when you just want something that tastes like summer on a plate.


Here’s What You’ll Need:

  • ½ medium red onion, thinly sliced

  • 3 medium tomatoes, cut into wedges or bite-sized chunks

  • ½ English cucumber, cut into chunks

  • ½ green bell pepper, cored and thinly sliced

  • ½ cup pitted Kalamata or Castelvetrano olives

  • 1 teaspoon dried oregano

  • Sea salt and black pepper

  • 3 tablespoons extra virgin olive oil

  • Juice of ½ lemon (about 1½–2 tablespoons), more to taste

  • 2 tablespoons fresh dill, chopped

  • 2 tablespoons fresh parsley, chopped

  • 5 ounces Greek feta cheese in brine, sliced into large pieces


How to Make It:

  1. In a large bowl, combine the tomatoes, cucumber, bell pepper, olives, onion, dill, and parsley.

  2. In a small bowl, whisk together olive oil, lemon juice, oregano, and a pinch of salt. Pour over the salad and toss gently.

  3. Top with large slices of feta cheese.
