What You’ll Need
For the Crust:

4 cups almond flour

½ cup pure maple syrup

⅔ cup refined coconut oil, melted

2 teaspoons vanilla

2 tablespoons arrowroot starch

½ tsp salt
For the Filling:

⅓ cup refined coconut oil, melted

¼ cup pure maple syrup

½ cup coconut sugar (for refined-sugar free) or brown sugar if you prefer

1 teaspoon vanilla

1 teaspoon arrowroot starch

2 eggs

1 cup chopped pecans
How to Make Them
Crust:

In a medium bowl, mix together all the ingredients for your “shortbread” crust.

Spread into an 8x8 parchment-lined baking dish and press down firmly with a spatula to create an even layer.

Bake at 350°F for 18–20 minutes, until golden.
Filling:

In a large bowl, whisk together all filling ingredients except the pecans.

Fold in the chopped pecans.

Pour filling over the baked crust.

Bake for another 20 minutes, until set.

Remove from the oven and cool for 30 minutes, then refrigerate for at least 1 hour before slicing into bars.
