Imagine a light cheesecake filling, the sweet and tart balance of key lime cookies, the subtle texture of graham cracker, sweetened condensed milk and zesty lime…this parfait is amazing. Feel free to use regular (Persian) lime juice and zest, no need to go crazy looking for the key lime version. Make this dessert ahead and serve individually or family style.

- Feed Your Soul Key Lime Cookies
- 1 cup finely crushed Graham cracker crumbs (optional)
- 16 ounces cream cheese, softened
- 3 tablespoons confectioners’ sugar
- 1 cup sweetened condensed milk
- 1/3 cup key lime or regular lime juice
- 1/4 cup granulated sugar
- 1 tablespoon lime zest
- Whipped cream
Using a handheld electric mixer, beat the cream cheese and confectioners’ sugar together until smooth and creamy.
Blend in the condensed milk, key lime juice, granulated sugar, and lime zest until creamy and well incorporated.
Alternate the key lime cookies, graham cracker crumbs, and the cheesecake
Top with homemade whipped cream
Garnish with a Key Lime cookie
Place in the fridge for about 1 hour to set completely.
