NOODLE KUGEL

This year we celebrated the 8th night of Hanukkah on Christmas Day, so we decided to make everyone's favorite festive dessert- NOODLE KUGEL!  This traditional jewish one bowl recipe is easy to make and absolutely delicious. Topped with cherries, served warm or cold, maple syrup or not, noodle pudding is always a favorite.

 

Ingredients      

16 oz cottage cheese                

8 oz cream cheese

1 cup granulated sugar

5 eggs

1 tablespoon vanilla

10 oz extra fine egg noodles

2 cups milk

4 tablespoons unsalted butter,  melted and slightly cooled

cinnamon for sprinkling

2 cans cherry pie filling 

Directions

  1. Boil noodles according to the package and allow to cool
  2. Combine all ingredients in one large bowl. I like to start with the cream cheese to make sure its soft and spreads through, add cottage cheese, sugar, eggs, vanilla, milk, butter and cooked noodles.
  3. Pour your mixture in a large baking dish
  4. Top with cinnamon
  5. Bake at 350 degrees for 1 hour
  6. Top with canned cherries

*serve warm with maple syrup!
